Mediterranean Tuna Burger
Looking for something light yet filling, easy and quick to make for meatless meals? These burgers are perfect!
Top a fresh tuna burger made from a mixture of Ahi tuna and herbs with olive tapenade (see below) for a full Mediterranean effect. This black olive tapenade is wonderful just on bread. If you like olives, you will love this homemade condiment.
These burgers can be prepped ahead and cooked later or even cooked ahead and eaten later. They are a nice heart healthy change from the usual burger night.

INGREDIENTS
Burgers (makes four burgers)
- 1 pound ahi tuna steak, cut into 1-inch pieces
- 2 cloves garlic
- 2 tablespoon chopped chives
- 1 teaspoon kosher salt
- ½ teaspoon dried thyme
- ½ teaspoon lemon zest
- 4 Kaiser rolls, split
- 4 tablespoon mayonnaise
- 8 tablespoon Black Olive Tapenade (see below)
- ½ cup arugula (Editor’s note: Rocket lettuce, checked for bugs)
Black Olive Tapenade (makes half cup)
- ½ cup chopped Kalamata olives
- 1 small shallot, diced
- Juice of ½ lemon
- 1 tablespoon olive oil
PREPARATION
1. In a food processor, combine tuna, garlic, chives, salt, thyme, and lemon zest. Pulse to chop and combine until a coarse mixture is formed. Form four patties and place on a greased sheet pan. Cover with plastic wrap and refrigerate at least 1 hour or overnight.
To prepare Black Olive Tapenade: In a small bowl, combine olives, shallot, lemon juice and oil. Mix well and refrigerate until ready to serve.
2. Cook burgers on a preheated grill or grill pan for 15 to 18 minutes per side or until cooked through. Remove from grill and let rest for 5 minutes. Place each burger on a kaiser roll with 1 tablespoon mayonnaise, 2 tablespoons Black Olive Tapenade, and a few arugula leaves.
