This recipe includes the Three-Ingredient Middle Eastern Salad Dressing!

When I make salads for Shabbat, a holiday, or a party, making the dressing is undoubtedly the most time consuming of all my meal prep. Each salad with it’s own signature dressing is comprised of a laundry list of ingredients.  With this genius new salad course hack, I can make different salads with one dressing and they all taste unique!

Preparation Time: 5 minutes

SALAD INGREDIENTS

  • 2 medium roasted beets, peeled and diced into medium-sized cubes
  • Kosher salt
  • Freshly cracked black pepper
  • 1 cup thinly sliced Napa cabbage, checked for bugs
  • ½ cup pomegranate arils

 

DRESSING INGREDIENTS (Three-Ingredient Middle Eastern Salad Dressing)

  • Juice of 1 ½ lemons (more to taste)
  • 3 tablespoons chopped flat-leaf parsley
  • 1 teaspoon cumin
  • Pinch of kosher or sea salt
  • ¾ cup extra virgin olive oil, such as Colavita

 

PREPARATION

  1. Prepare the Three-Ingredient Middle Eastern Salad Dressing:
    • Whisk lemon juice, parsley, cumin, and salt until mixed.
    • Stream in evoo until mixture has emulsified.
    • Top the beet salad.
  2. Toss the beets with salt, pepper, and 1 tablespoon of the dressing.
  3. Arrange cabbage on plates and top with seasoned beets. Garnish with pomegranate arils and drizzle with additional dressing.
