Green Beans with Walnut Miso
This side dish is perfect for a holiday meal! Light, delicious, colorful, and always a crowd-pleaser.

INGREDIENTS
(Yields 6 servings)
1 lb. green beans, trimmed
2 tablespoons grated ginger
¼ cup walnuts, toasted and coarsely chopped
2 tablespoons water
1 ½ tablespoon mild miso
½ teaspoon soy sauce
PREPARATION

Fill a large pot with water and bring to a boil. Add green beans and cook for 5 minutes, drain and shock in an ice water bath.

Combine, ginger, walnuts, water, miso, and soy sauce in a food processor. Process until minced.

Toss walnut mixture with the green beans, and then serve.
