Fresh Corn Picanti Salad
You can't stop this salad! A tangy picante sauce perks up corn, lettuce, and veggies to make the perfect salad.

INGREDIENTS
5 cups of Roman lettuce
A glass of chopped parsley
2 cups of cucumbers, sliced or diced
2 cups of tomatoes, sliced (or cherry tomatoes sliced in half)
2 cups fresh corn
1 tablespoon black pepper – not mandatory for those who do not like spicy
Picante Sauce:
A quarter cup of olive oil
5 tablespoons lemon juice
2 tablespoons feta cheese or nutritional yeast
2 teaspoons cumin
1 teaspoon of paprika
1 teaspoon of sea salt
½ teaspoon of black pepper
PREPARATION
1. Mix all veggies in a bowl.
2. Mix the ingredients of the Picante Sauce, and add to the bowl of veggies. Mix well and serve. You can garnish with Kalamata olives.
