Lentil and Pea Soup

This soup is simple to prepare, satisfying, nutritious, and inexpensive. The interaction between the flavors of lentils and the peas is awesome.

It is a fun soup to make when it’s cold outside, and the home is filled with delightful scents! If you have a large pot, make a double in advance! 

 

INGREDIENTS  

For 6-8 servings 

  

2 cups of orange lentils, checked for bugs and rinsed 

1 cup of frozen peas (or dry peas softened, checked for bugs, rinsed, and then cooked until softened) 

2 ½ liters of water 

2 onions, sliced or chopped 

4 cloves of garlic, sliced 

2 tablespoons of chicken-flavored soup 

¼ teaspoon cumin 

Salt, black pepper 

Oil for frying 

(Optional) Celery stalks or a handful of celery leaves or a quarter of sliced celery root 

Garnish: fresh parsley and a tablespoon of sour cream (or thick yogurt) per serving 

 

PREPARATION 

  1. Sauté the onions in oil until browned. Add the sliced garlic cloves and mix well (they should get some color, just note that they won’t burn). If you also add celery, you should add it a little before garlic.

  2. Add the lentils, peas, water, and the spices (black pepper, salt, cumin, soup powder). Bring to a boil and cook for about 10 minutes. Stir occasionally.  

  1. Reduce the heat and continue to cook for about half an hour, until the lentils crumble and the soup gets a velvety texture. In the meantime, mix occasionally and add water if the soup is too thick. 

  

When serving, top each serving with a dollop of sour creamand then sprinkle with a little chopped parsley or any other fresh herb you like.
