Keep it light and exciting with this Tropical Slaw, get some pineapples and mangos and liven things up. 

 

This recipe makes four servings. 

 

INGREDIENTS 

1 cup shredded green cabbage, checked for bugs 

1 cup shredded red cabbage, checked for bugs 

½ cup shredded carrots 

1 cup diced pineapple 

1 ripe mango, diced 

½ medium red onion, thinly sliced 

4 tablespoons light mayonnaise 

2 tablespoons apple cider vinegar 

Juice of 1 lime 

1 teaspoon sugar substitute 

½ teaspoon kosher salt 

 

PREPARATION 

  1. In a large bowl, combine cabbage, carrots, pineapple, mango, and red onion, and then mix well.  

  1. In a small bowl, combine mayonnaise, vinegar, lime juice, sugar substitute, and salt, and then whisk until smooth.  

  1. Pour over slaw and toss well to coat. Refrigerate for 20 minutes or up to 1 hour before serving.
