Fish Patties
This is a flexible recipe that you could make every week differently! One bowl, simple, fast and a whole family pleaser.

This recipe is so flexible. Use canned salmon or tuna. I am sure it would be fantastic with ground white fish also!
Pick your veggies, if you want to add them. Sweet peppers or zucchini are my favorite, but it works great with carrots, sweet potatoes and even potatoes. I often mix them – carrot and sweet potato, or zucchini and potato are favorites.

INGREDIENTS
2 cans salmon/tuna – drained, deboned
1 egg
1 small onion diced, or 1 Tblsp onion soup mix
¼ cup binder – bread crumbs, matzoh meal – personally I use gluten free potato-based panko, or potato starch
Salt and pepper to taste
Oil for frying
Optional: Add veggies! Add about ½ – 1 cup veggies (1 or 2 small) of your choice – whatever on hand that you want to use. Chopped fine, grated, use a food processor to pulse into small bits, or my usual hack – put all the liquid ingredients in, pulse with a hand blender until chopped coarsely, and then add the solid ingredients.
Increase to 3 cans of fish and 3 eggs. Increase binder to 1/3 cup.
INSTRUCTIONS

Combine all ingredients in a bowl.
- Form into patties.
- Fry in oil of your choice.
